
There are many varieties of Avocado toast from different toppings to various bases.
Just pick your favorite base, spread some avocado and add some toppings! Below I am sharing 3 of my favorite combinations using various bases, sweet potatoes (for a low carb option), sour dough and whole grain bread!
- Avocado on Sweet Potato Toast with Mushrooms and Feta.
- Avocado Toast with Tomatoes and Sauerkraut
- Avocado Toast with Crispy Prosciutto and a Fried Egg
Avocado on Sweet Potato Toast
Ingredients:
- 1 Sweet Potato
- 1 Avocado
- 4 Mushrooms Sliced (Crimini or White)
- 2 Tbsp. Feta Cheese
- Oil (Olive or Avocado Oil are great options).
- Sea Salt
- Pepper
Directions:
- Wash sweet potato then cut (longways) into 1/4 in. wide pieces.
- Toast sweet potato slices in toaster ( about 4 minutes long – depending on the toaster it may take more time.)
- Meanwhile, clean and slice mushrooms.
- Next, heat up a small pan with oil (Olive oil or Avocado oil), add mushrooms with some salt and pepper and sauté for 3-5 minutes.
- When sweet potatoes and mushrooms are done add your toppings: Slice or smash the avocado, place onto sweet potato slice and sprinkle sea salt. Layer on mushrooms and feta cheese!
- Enjoy!
Avocado Toast with Tomatoes and Sauerkraut
Ingredients:
- Sliced Bread – I used Whole Grain
- 1 Avocado
- 3 Cherry or Heirloom Tomatoes
- Sauerkraut (I prefer Trader Joes brand)
- Optional: Trader Joes “Everything But The Bagel” Seasoning
Directions:
- Add sliced toast to toaster (toast to your personal preference)
- Meanwhile, slice tomatoes and avocado
- When toast is done add spread avocado, then add sauerkraut. Next sprinkle “Everything But The Bagel” or Sea Salt then add tomatoes on top!
- Enjoy!
Avocado Toast with Crispy Prosciutto and a Fried Egg
Ingredients:
- Sliced Bread – I used Sourdough
- 1 Avocado
- 1 Egg
- 2 Slices of Prosciutto
- Salt and Pepper
- Olive Oil
- Butter (Optional)
Directions:
- Heat pan on medium with Olive Oil, then add small pieces of prosciutto and fry until crispy.
- Add sliced toast to toaster (toast to your personal preference)
- Meanwhile, heat small pan with 1/2 tbsp. of butter or Olive Oil then crack 1 egg into the pan, sprinkle salt and pepper on egg and fry it. **I usually fry mine for 2-3 minutes then flip it for 1 minute – depends on how runny you prefer the yoke.
- Once toast and ingredients are done start building your toast: Layer sliced or mashed avocado on toast, next add your fried egg and top it off with crispy prosciutto.
- Enjoy!
TIP:
*** If you like spicy foods, add your favorite hot sauce or Sriracha to the toast! It would taste great on the Crispy Prosciutto and Fried Egg Avocado Toast!
